Kova Kajjikayalu, also known simply as “Kova Kajji” or “Kova Gujiya,” is a delectable Indian sweet dish that originates from the southern regions of India. This traditional treat is widely enjoyed during festive occasions, celebrations, and special gatherings.
Kova Kajjikayalu are essentially sweet dumplings made from a filling of khoya (also called kova or mawa), which is a concentrated form of milk solids. The khoya is combined with a mixture of grated coconut, finely chopped nuts like cashews, almonds, and sometimes raisins, along with a blend of aromatic spices such as cardamom and nutmeg. The filling is sweetened with sugar or jaggery, which lends a rich sweetness and depth of flavor to the dish.
The process of making Kova Kajjikayalu involves kneading a dough using all-purpose flour or semolina, which is then rolled out into small circles. A spoonful of the khoya and nut mixture is placed onto each dough circle, after which the dough is folded over to create a crescent or half-moon shape. The edges are sealed either by crimping or pressing with a fork, ensuring that the delicious filling is securely encased within the dough.
